The ancient Pavie vineyard – going back at least as far at the 4th century AD – is located on the southern part of the Côte de Saint-Émilion. Thanks to the excellent terroir, it is one of the top two châteaux in this part of the appellation (along with Ausone) as well as one of the finest in all Bordeaux. Pavie received Premier Grand Cru Classé B ranking in the official classification of Saint-Émilion wines in 1954. The Pavie terroir produces wine which is characterised by remarkable power. Fermentation temperatures are kept moderate and the wine does not stay too long on the skins in order to preserve finesse. The wine's natural richness and strength nevertheless makes malolactic fermentation and aging possible in 100% new oak barrels. The Vineyard: Château Pavie is located south-east of the village of Saint Emilion with part of the vineyard on the plateau at the top of clayey soil, with a majority of the vineyard on the limestone soils on the côte with around 3 hectares on the less distinguished sandy soil at the bottom of the slope. There are 32.44-hectares of vines: 60% Merlot, 30% Cabernet Franc and 10% Cabernet Sauvignon with an average vine-age of 45 years. The vineyard is pruned hard: 6 buds for old vines and 2 buds for young with extensive green harvesting in the summer months. Yields have been reduced from 55hl/ha under Valette, to an average of 30hl/ha and Gerard Perse did not hesitate in pulling up 28% of inferior vines and installing a new drainage system.
