Brown's Chicken & Pasta is a chain of Fast Food Restaurant s specializing in Fried Chicken based in Chicago , United States . The chain was founded as '''Brown and Portillo Inc.''' by John Brown and Frank Portillo in 1964 in Bridgeview, Illinois . It was renamed in the mid 1980s to Brown's Chicken and Pasta. Brown's Chicken expanded to many locations throughout the U.S. in the 1970's but after 2005 contracted their locations to exclusively within Chicagoland . The company now has 47 locations in the Chicago area. In the 1980s , Pasta was added to the menu and eventually the name of the company.

On January 8 , 1993 , the Brown's Chicken Massacre occurred at a Palatine, Illinois branch. Seven people were slain.

Brown's Chicken eventually added the Chicago Way to all of its stores. The Chicago Way sells hot dogs, hamburgers, and Italian beef sandwiches. This is all Vienna Beef.

Frank Portillo is president of Brown's Chicken. He is the older brother of Dick Portillo, founder and owner of the Portillo's restaurant chain.
