A relish is a Cooked or Pickled Sauce , usually made with Vegetable s or Fruit s, generally used as a Condiment . It can be smooth or chunky, sweet or savory, hot or mild.

Thus, Chutney s and Pickle s may both be considered relishes. Other relishes include Ajvar .

Relish can be mixed with Mayonnaise to make Tartar Sauce .

A famous relish is the Gentleman's Relish , which was invented in 1828 by John Osborn and contains spiced Anchovy . It is traditionally spread sparingly atop unsalted Butter on thin, hot Toast .
