In recent decades wine quality has improved as Vineyard management has improved. That has included providing better drainage and reducing yields. Fermentation occurs according to vineyard plot and uses barrel, cement and stainless steel containers. The wine consists of Cabernet Sauvignon (70%), Merlot (15%), Cabernet Franc (13%), and Petit Verdot (2%) and is aged 18 months in predominantly new oak. The 2001 vintage was selected for competition in the Ottawa Wine Tasting Of 2005 , where it was judged to place 14th out of 18 wines. SEE ALSO SOURCE |
