A simple beer cheese recipe to try at home... Ingredients: 2 pounds sharp Cheddar cheese at room temperature, 2 cloves mashed garlic, 3 tablespoons Worcestershire sauce, 1 teaspoon dry mustard, Tabasco to taste, 1/2 bottle (6 oz.) beer (more if necessary), 1 teaspoon salt (add more if desired). Directions: Cube the cheese and process it in an electric mixer until it is smooth. Add the garlic, Worcestershire sauce, mustard, and tabasco. Blend well. Add the beer while continuing to beat the cheese a little at a time until the mixture is a good, firm spreading consistency. (Too much beer will make the cheese too fluffy.)
