Shkembe




Shkembe is a Bulgarian word ('''шкембе''') of Turkish origin for Belly (original ''işkembe''), but also stands as the short for '''shkembe chorba''' — a kind of Tripe soup prepared mainly in Bulgaria . Tripe is the thick lining of the stomach of cattle, and some Bulgarians shun the soup as cheap, vulgar, unappetizing, or inferior, whereas others see it as a national treat. According to unsubstantiated popular belief, shkembe chorba alleviates Hangover s if consumed in the morning. Shkembe chorba usually contains garlic, vinegar, and chili peppers as seasoning.

There is a similar type of soup in Turkey, ''İşkembe Çorbası'' (''çorba'' meaning soup in Turkish, and ''işkembe'' being derived from the word for Tripe ).

The soup is quite common in the eating places all over the Balkans and Turkey.

Another different type of tripe soup common in Czech Republic is Drstkova Polevka (''dršťková polévka''). It is also well known as a hangover remedy.
